We have only a few recipes for lobsters but do have a related thread that offers some good tips for those wishing to catch and cook lobsters.

Subject: San Clemente hooping 12/31

Third time's the charm! Hooped from about 5:30-8:30pm and got a keeper. Finally paid off, great way to end the year.

1 lobster (keeper)
1 croaker (used for bait)
2 small crabs (rock crabs? released)
1 sea star (released)
ps: after twisting the tail off, his body kept wriggling around. Felt kinda bad. Is there a better way to "euthanize" bugs?

Stick them headfirst into boiling water for about a minute. It's a lot better than dismembering them alive.

Better way: put them to sleep—toss them in the freezer for about fifteen minutes. They will go to sleep and they won't wriggle when you put them in the jacuzzi.

I could not believe how tough these guy's are! I placed mine in a trash bag for around an hour on the pier, and in the back of the SUV for the 1 1/2 hour home, and they were still alive when I got home! So I put them in the freezer to sleep.

Remember that joke about the foul mouthed parrot that was placed in the freezer alive? There's got to be a way to slip the lobster into this equation?

I had two live for days in fridge & the freezer!! Caught two bugs recently and I wasn't ready to cook them, so I put them in one of these soft sided cooler bags and put them in the fridge. Couple days later, I thought, "Oh, I'd better freeze them, so they don't go bad." Looked in the bag and they were slow but still alive! I then shoved the bag in the freezer and the next day or so, I took them over to my aunt's house for longer freezer storage and they were slower but still twitching! My aunt was saying something like, "They aren't alive are they?" I just kind of laughed and shoved the bag in the freezer! Boy they are like bugs! They're like the cockroaches of the sea!

The idea of putting them in the freezer is not to solidify them. Rather, you are attempting to slow down their metabolism so that they don't give you a tail-slap of boiling water in the face when you lower them into the pot.

• Can that really happen? Yes.
• Does it happen every time? No. Thankfully...
• Does DOMPFA Ben really feel an ethical dilemna when he drops a lobster into a pot of boiling water? We'll have to wait for an answer, his mouth is full of lobster.
• Does DOMPFA Ben condone the torture of God's creatures, the willful destruction of habitat, carving your initials in a living tree, littering, keeping short bugs, or cutting off senior citizens on the freeway? No, no, no, no, no, and no.

Essentially (or is that existentially?), eating living things means ending their existence in the current plane and current form and current paradigm. Whether you freeze them, tail them, behead them, boil them, cut them in half lengthwise and toss them over red-hot coals, or shuck them and eat them raw with a little Ponzu sauce (not recommended, btw)...the end result is the same.

Freezing them first slows them down enough that they don't struggle and splash when you give them a steam bath.

If you really can't bear to watch them die, consider releasing them, or bring them to my attention, and one of my regional delegates will pick up your lobsters from your home or office for proper, um, disposal. :) Happy Hooping. Ben

That reminds me of my dad when he used to twist and snap the neck of chicken we raised to eat a long time ago. It was nuts watching them shake in his hand for minutes while he finished his cigarette. Anyhow, as for the lobster you have great suggestions for immediate cooking by tranbaby and dompfa if you plan on freezing em...

Basic Broiled Spiny Lobster

• After killing and cleaning the lobster
• Preheat the broiler
* Place the lobster tails on a baking sheet
• With a sharp knife or kitchen shears cut the top side of the lobster shell lengthwise
• Broil lobster tails until lightly browned and the meat is opaque (5 to 10 minutes)
• Serve with melted butter

Lobster with Coconut, Rice and Banana

Ingredients:

• 2 ½ lb lobster tails (4-5 pounds of lobster)
• 4 oz coconut cream
• 1” fresh ginger, finely chopped
• 2 large onions, finely chopped
• 1 clove garlic, finely chopped
• Salt
• 1 tsp brown sugar
• 1 tsp lemon or lime juice
• 1 Tbsp Mild Curry Powder
Or—
• 2 tsp tumeric
• 2 tsp corriander
• 2 tsp cumin
• ½ tsp chili
• ½ tsp cinnamon
• ½ tsp black pepper
• Pinch of cloves and nutmeg

Preparation/Cooking

1. Boil the lobster for about 10 minutes. Cool. Remove most meat from tail, body and legs. Cut into walnut-sized pieces. Reserve cooking liquid.
2. Mix coconut cream with 1 cup of the lobster cooking liquid in a saucepan until melted. Add spices and cook over a medium heat until a ring of oil appears and the spices smell cooked.
3. Add onion and garlic to the mixture with another cup of water and cook for 15 minutes more. Add lobster meat. Season with salt and heat for 5 minutes over a low heat. Add brown sugar and lime or lemon juice.
Serve with yellowPilau rice, sliced bananas in lime, grated fresh coconut, mango chutney, and carrot salad.
