Chefs/Cooks

Just curious on how many of you are cooks or chefs? In going back and entering the posts on the "Recipes" page it was obvious that several people were or had been cooks/chefs. For some reason it hadn't registered with me before.

I would say I cook. Lol

I'm not in the league of the expert cooks here but... yea I cook.

I once posted a recipe for a "vina sandwich" but can't remember where. My brother has some mean fish recipes but he mainly cooks for himself and his wife or sometimes when I come over.

Cooking with fish can be species specific when it comes to preperation. I still have a fear and no disire to cook a carp. I've learned techniques and preperation methods to remove the smell, but after my first experience, I can't get that bad aquarium smell out of my head.

To cook fish successfully requires proper preservation upon catching, proper preparation/cleaning, and understanding what types of cooking methods work best for different fish. Fish are simply more delicate (for the most part) than beef and other meats and you have less room for error. However, I've learned a lot from the "pier rats" on this board, especially how different spices and ethnic recipes balance the stronger-flavored fish. When young about all I enjouyed were the white fleshed fish but today it would be rare to find a fish I don't enjoy (unless it's some of the fermented fish seen in some cultures).
