2. I have added some additional information to the recipe pages from "McClane's Fish Buyers Guide" to give you more information about the fish. Hopefully it will be useful but also shouldn't be taken as "the answer" to try or not try a fish. Different fish simply have different flavors/fat content and different methods of cooking can address those differences. That's a reason why we have the recipes page.
