You can only surf fish for 1 type & you have to eat it

New law is passed. You can fish, but you are only allowed one type of fish for the rest of your life and you have to eat it and in this thread provide a recipe
So, an answer would be something like (chose the fish at random--ie, this is not my answer; it is used as an example):

Lings. I love where you can catch them, and the fight is decent, too. Add to that the fact that you can catch a nice one.

My favorite recipe:

Ingredients
  • 4 tablespoons butter, divided


  • ½ sleeve buttery round crackers (such as Ritz®), crushed


  • 1 pound thick-cut cod loin


  • ½ medium lemon, juiced


  • ¼ cup dry white wine


  • 1 tablespoon chopped fresh parsley


  • 1 tablespoon chopped green onion


  • 1 medium lemon, cut into wedges




Directions
  1. Gather all ingredients.

  2. Preheat the oven to 400 degrees F (200 degrees C).

  3. Place 2 tablespoons butter in a microwave-safe bowl. Melt in the microwave on high, about 30 seconds. Stir buttery round crackers into melted butter.

  4. Place remaining 2 tablespoons butter in a 7x11-inch baking dish. Melt in the preheated oven, 1 to 3 minutes. Remove dish from oven.

  5. Coat both sides of cod in melted butter in the baking dish.
    Bake cod in the preheated oven for 10 minutes. Remove from oven; top with lemon juice, wine, and cracker mixture. Return to the oven and bake until fish is opaque and flakes easily with a fork, about 10 more minutes.

  6. Garnish with parsley and green onion and serve with lemon wedge

Hard question, as most of the fish that are easy to catch, are not my favorite fish to eat, but many fish that I like to eat are difficult to catch. I would say any of the SoCal saltwater basses, as they are found in a lot of easily-accessible fishing spots, and do taste good if I can catch a legal-sized one.

Never-Gonna-Starve Grunion

1 daily bag limit of California grunion- scaled, headed, and gutted
32 oz of white vinegar
2 lemon slices
2 sprigs of fresh dill
1 dozen white boiler onions

Dump it all in a giant mason jar, refrigerate for a week, then enjoy! Two weeks later, they'll be back again (March - July). Rinse and repeat. No matter how skunky a fisherman I am, I can't possibly screw up catching grunion with my bare hands!
