So on this site, and others, apparently they aren't considered edible since they tend to eat a lot of the toxic types of plankton

I could guarantee aren't toxic I'd really like to try to cook them up like sichuan crayfish (sauteed over high heat with chili oil, scallion, ginger,
garlic, sichuan peppercorn, soy sauce, etc) rather than a cajun crawfish boil...
