    It won't help with the flavor, but I like to indirect grill surfperch on a Weber charcoal grill, skin on. The grill draws a lot of hot, dry air over the fish and helps firm it up.

    I read references lately to "crab backs" as a bait here, here, and here for example. Does this mean the top half of a crab shell, plus whatever sticks to it? Crabs with their legs cut off? Something else? I assume we're talking small crabs like shore crabs or (at the most) kelp crabs...

    YoungAsianFisher, I think we are in deep agreement with one another without realizing it. Any Dungeness caught at Fort Point, don't eat the butter. Rock Crabs (subject of this thread) caught at Fort Point, no such advice.
