It won't help with the flavor, but I like to indirect grill surfperch on a Weber charcoal grill, skin on. The grill draws a lot of hot, dry air over the fish and helps firm it up.

YoungAsianFisher, I think we are in deep agreement with one another without realizing it. Any Dungeness caught at Fort Point, don't eat the butter. Rock Crabs (subject of this thread) caught at Fort Point, no such advice.

Fort Point isn't in that region. But any Dungeness caught in the bay area (Pt Reyes to Pillar Point), the advice is to not eat the butter.
