I haven't done it yet, but I am going to make some of the crab/pork meatballs up with fish instead of crab. Lately, I've been substituting fish sticks (pollack) breaded with panko into a crab cake recipe I like. The resulting fish cakes are delicious and much less costly.

I have made "crab" cakes from cabezon, and even other rockfish for years. It works very well. Maybe not quite as sweet as as a Dungeness, but a very good product anyway.
