this is an incredibly simple recipe I learned from a friend back when I was a kid. It's so simple I hesitate to even call it a recipe.
Essentially all you need is some bacon(generally the more fat on the bacon, the better, in this case) and a fillet of fish of your choice(generally any fish that you can pan fry seems to work). Just dice the bacon up into small pieces, fry it until it's crispy, remove them with a fork and set them aside. Then take the fish(coated or uncoated, I usually just dust it in flour) and fry it in the bacon grease. Serve covered in the bacon pieces. Simple and delicious.
