1.5 pounds fish fillets (your choice but mild fish, like shark, works well)
1 package "Shake 'N Bake" brand Hot and Spicy seasoning (2 packages per box)

1) Empty seasoning package into a small plate.
2) Cut your fillets into fish stick sized pieces and dredge through the seasoning on all sides. (also works with whole fillets)
3) Bake on a wire rack at 400 F. in the lower part of the oven (10-20 min) or until done, flipping once if desired.
4) Enjoy...

You can use the "shaker" bag but you have to be gentle, especially with smaller or longer pieces.
You can also use an eggwash and fry but I like the texture better when baked.
Other options include adding 2 tablespoons of garlic powder and/or adding more paprika (to taste) if you want it hotter.
