|Oriental Salmon with Tropical Salsa
24 ounces (1 ½ pounds) fresh salmon fillet
½ cup Teriyaki sauce
2 tablespoons brown sugar
1 teaspoon vegetable oil
pinch of salt and pepper
1.Divide salmon into four 6-ounce portions
2.2. Mix Teriyaki sauce and brown sugar. Marinate salmon for 2-4 hours.
3.Heat the oil in a frying pan until it just starts to smoke. (A very hot pan will keep the fish from sticking.)
4.Sprinkle a small amount of salt and pepper on the salmon. Don’t put too much or the salmon will be overly salty from the marinade.
5.Pan fry the salmon on one side until it gets lightly caramelized, then turn over. Total cooking time depends on the thickness of the fish, usually 4-6 minutes total time.
¼ cup diced red onion
1 diced small jalapeño pepper
½ cup finely chopped pineapple
½ cup finely chopped red pepper
½ cup diced mango
½ cup diced strawberries
1 teaspoon chopped fresh mint
Salt and pepper to taste
1.Mix all ingredients together.
2.Season to taste with salt and pepper; this will enhance the flavors of the salsa.
3.Top salmon with the salsa or serve it on the side.
4.Any combination of fruits can work.
Serve salmon with steamed rice or saffron rice.
