2 cups seasoned bread crumbs
1 cup all purpose flour
3-4 cabezon (or any fish)fillets
Flour base: flour, paprika, salt, pepper
Egg wash: 2 eggs beaten with a dash of garlic salt, pepper and paprika
Bread crust: seasoned bread crumbs
coat the fillets with the flour base. shake off any excess. Then dredge the coated fillets in the egg wash. Make sure entire fillet is coated with the egg wash. Then roll fillets in bread crumbs to coat evenly. cook in frying pan with olive oil for 4-5 mins on each side or until golden brown. The fillets should come out white, flaky and juicy. Eat when hot or warm, gets chewy when left to cool.
