years ago I remember seeing a fried smelt recipe, which i believe involved coating the fish in potato starch. does anyone know where that recipe is off hand? Have always wanted to try it and plan on netting some nightfish tonight, any help would be appreciated.

Deep fry them with a flour and Panko mix after dipping in egg.

Salt and lemon.
