I pulled a couple of bags of rockfish fillets out of the freezer, thawed'em in cold water, layered'em in a pyrex dish with pace picante sauce top bottom and in-between, in the oven for 45 minutes at 350, a pot of steamed rice and dinner's on!...mutt.

Oh, yes,(for me). Ofcourse, I like fish prepared just about anyway you can imagine, a lot of people don't, but deep fried with panko crumbs works for everyone most of the time. The reason I did it that way cause it's so very quick-N-easy, delicious and NOT FRIED! If I want to make it a special dish, I'll chop-up a fresh tomatoe salsa, put a layer of thin sliced lemons on the bottom of the pyrex, then the fish, then the salsa, then a nice "fat" layer of avacados on top. Into the oven, then place it over your favorite rice recipe and Bon-apa-tit...mutt.

for a variation, put the fish on a bed of sliced 'matoes and onyums; add another layer of 'matoes and onyums. Over that, sprinkle a generous amount of feta cheese.

bake and just before the fish is done, broil to brown the cheese. (FYI, it's Psari Plaki, if you are Greek. OPAH!!!!)

Yeah that sounds Really Good too, only it changes the whole composure of the dish, I'll bet that would go great with some sort of noodles and maybe an eggplant recipe on the side...mutt.
