I lost some meat while cleaning out the heads but I had too since I head most of the organs have toxins in them due to waste.


So now they are clean...I wanna cook them but how...I hear ppl use them for soup, or stuff them, but with what?


Ideas?

Also lobster were alive and kicking when I got home..no live well needed.

chop the heads in half with a cleaver
clean out guts
lay flat in a baking pan
drizzle olive oil on them,
bake at 400 for 12-15 mins

Crush the heads with a rolling pin and boil on low with chopped carrots, onion and celery as well as some fresh herbs and bay leaf and do not season. After 4 to six hours strain and discard all the solids. You will then have lobster stock which you can freeze and use to steam mussels or clams in. Or thicken with a roux like you would gravy and add cream sherry and saffron for a lobster bisque.

both are the things I would do. cut in half and broil over high heat for a few mins. with herbs and oil.

or the lobster bisque idea. boil with vegies (start with cold water) and you can use it for seafood stew.

as for stuffing. you could take the meat from the lobsters half cook it and mix with just about anything else you wanted for taste, mix in the yellow butter and stuff the heads with that. bake em around 400 i would imagine. just an idea
