I'm getting kind of bored of my normal recipes. Was wondering if you guys had some good recommendations for some delicious sauces for fish. icatchcolds already gave me a good recipe for Sage Butter, and I'm going to give that a shot soon. Thanks in advance.

I'm waiting to see the reponse to this thread too...I too would like to see some good sauce to go with a nice fish...

grab yer food processor, throw in;

- a handful of garlic cloves
-favorite hot sauce
-shot of silver tequila or... more Wink
-salt
-pepper
-decent amount of chopped, chiffoned, whatever, cilantro
-half a stick of butter
-pinch of sugar
-some finely sliced shallots is optional

spin that till blended. scoop out with a spatula and you can freeze it up for later if you want.
otherwise throw it in a pan and sizzle it for about a beer, top your fish and there ya go.
