Start with fesh filets of whatever shark you have handy (my favorite is Leopard)

Rinse filets in cold water and pat dry

Season each filet with "Old Bay" Garlic and herb

Wrap each filet entirely in the parchment paper

Bake in the oven at 350 for 10-15 min (depending on thickness)

Serve on top of steamed rice, with a side a veggies.

Very simple, and very good. The paper seals in all the juices.

PS- The above works well with any type of fish, as long as the filets are more than 1/2 inch thick
