Here's a recipe I tried yesterday night and wow. It's very tasty.
2 red bell peppers
1 stick butter
1 clove garlic
1 stalk green onion
(in the morning)
Cut the bell peppers into thin strips and put them in a pan. Cut the tomatoes in half and then into quarters and put them into the pan. Cut the onions into small chunks and put them into the pan. Mince half of the garlic clove and stick that in the pan. Season it with garlic salt, pepper, and olive oil. Mix it well and then put in refrigerator to marinate.
now go to your favorite pier and catch yourself a nice fish. I used a striper in this recipe so a 2-5 pound fish would be ideal. Once you bring it home, clean it and gut it and everything. Season it good with salt and pepper and set aside.
Preheat oven 400 degrees
In a small pan on the stove set to lo, put the butter in there to melt. Mince the rest of the garlic and put it in with the butter. Slice the lemons so you get rings, deseed them, and then throw into butter mixture. Get the green onion (I think chives would be better) and slice into small pieces and put them in butter mixture also. Once butter mixture is 'boiling' and everything seems incorporated, add some salt and pepper to taste.
Now take the vegetable mix out of the fridge and lay the fish over it. Now take the butter mixture and spoon it all over the fish. Try to get the lemon rings and all the other stuff to stay on the fish so that the fish will retain moisture a little longer. Stick it in the oven until the veggies start to char a little.
I have no idea about time, but mine stayed in it a little over an hour, though I'm sure that will not be the case.
